  • 1 cup dry purple wine
  • 1/2 pound chopped pitted prunes
  • 1 teaspoon floor black pepper
  • 1/2 teaspoon ground cinnamon
  • 1 pound pork tenderloin
  • 1 teaspoon salt

  • 2 tablespoons olive oil

Instructions :

  • Place red wine, prunes, black pepper, and cinnamon in a saucepan. Bring to a boil, stirring often. Reduce heat to low, cover, and simmer till prunes are soft, about five mins. Remove from warmness; drain prunes, booking wine, and permit to chill.
  • Cut a deep pocket nearly all the way through the tenderloin. Rub salt over the tenderloin. Fill the pocket with the cooked prunes; steady establishing with toothpicks.
  • Heat olive oil in a big skillet over medium-high heat. Cook fillet within the warm oil till browned, approximately 2 mins in step with facet. Pour in reserved wine. Cover till simmer until tenderloin is soft, approximately 1 hour. Discard toothpicks. Cut tenderloin diagonally into thin slices.
